Guacamole
Guacamole is a good way to add a number of plant-based nutrients to a meal. Actually, on a slice of buttered toast with some black pepper, it is a meal in itself.
Avocado is rich in monounsaturated fats, fibre and other nutrients. By the time you have added all the other guacamole ingredients in, you have a delicious dish that is great by itself, but can also augment most other meals thereby increasing your intake of beneficial fats, fibre and other phytochemicals.
Serves 4-6 depending on your level of guacamole addiction.
Guacamole
Ingredients
3 ripe avocados (don’t even go there if they are not ripe)
1/2 a red onion, finely chopped
1 garlic clove, crushed
Juice of one lime
2 tomatoes, de-seeded and finely chopped
3 tbsp of fresh coriander
Method
Scoop out the avocado flesh and finely chop it into a mixing bowl.
Add all the other ingredients, season and mix it all together.
If you are not eating it immediately, store in the fridge with one of the avocado seeds in it, which seems to stop it going brown.
Eat on toast, in tacos, with rice, on its own, with anything and everything, really.
