After years of home brewing, we know our kombucha inside out. Come and learn how to make and manage your own “tea mushroom”! You will see how easy it can be .
In this 3 hour workshop, we will cover every aspect of making and managing this fantastic elixir, from selecting the best ingredients, set-up, tasting, testing, troubleshooting, second fermenting, flavouring, storing and drinking. We’ll also be sharing the results of our research into commercial kombucha-makers, helping you to identify the brands that most suit your needs. We’ll cover the science behind what is really going on in that jar, looking at the evidence objectively.
Of course, there will also be testers, tasters and a delicious lunch (vegetarian), and time for us to answer more general fermentation questions, so please bring along all your questions, kombucha-based or otherwise.
We’ll be providing everything you need for a 1.5L batch. If you’d like to purchase a larger continuous culture jar, please select it as an add-on when you book your spot, or please do bring your own if you have one already.
We look forward to some kombucha fun together.

The venue is Caroline’s delightful Clifton home, and she has just repainted her hallway especially!!

Jo is an AFN registered associate nutritionist, a medical herbalist (with a special interest in gut health) and a fermentologist. Kombucha is a much-loved part of her fermentation practice. She is currently working on her PhD, focussing on a particular form of fermented food. Jo is a proponent of being the change we want to see in the world.
Caroline is a doctor of microbiology and the owner of Every Good Thing; a company that specialises in fermented food cultures and education. She is the author of two books on the subject; Fermented Foods, a Practical Approach and Vinegar (both published by Crowood).
We met several years ago when I organised a Guinness world record-setting Sauerkrautathon in Wells and Caroline came to help, and we have been egging each other on ever since; partners in brine, you might say!

Just wanted to say a massive thank you for Friday. Your passion and contagious enthusiasm truly inspired both the chefs and me. We had an incredibly enjoyable training session and gained a wealth of valuable insights about fermentation and gut health. I can't wait to see what the chefs do going forward with their newfound knowledge and skills within the BM restaurants. - BM Caterers
